I LOVE APPLE CRUMBLE!!
There now that we have that out of the way I can continue. Apple crumble has always been my go to whenever I’ve felt in the mood for some dessert. I think it’s because it was the first dessert I ever made by myself. We learned to make it in our home economics class when I was around 13-14 and I have been making it ever since, trying to figure out the perfect crumble that I love and can feel proud about. This apple crumble mixes in some almonds in the form of ground almonds for the crumble itself but also with a sprinkling of some flaked almonds on the top for a bit of extra crunch. I cut my apples in chunks instead of slicing them as I think it gives them a bit more flavour that way as it can suck up some of the sugar mixture that I simmer them in. It has taken me several years of trial and error and I have come to this recipe which has worked for me so well now. The apple crumble is one of those desserts you can eat whenever, in the colder months I prefer it with some hot custard poured over and in the warmer months a nice big scoop of vanilla ice cream on top does the trick. And now for the recipe:
Oven temperature 190/170 fan
8X11″ rectangular dish
Time: approx 45min (depends on how fast you are, I tend to be a slow baker 😉 )
- 900g Granny Smith apples, peeled and cut in bitesize chunks
- 1/2 cup light brown sugar
- 40g butter
- 2 tsps ground cinnamon
Start by melting the butter on medium heat in a saucepan, then add the light brown sugar and stir until the sugar dissolves. Once the sugar is completely dissolved add the cinnamon and mix until fully incorporated. Lastly add in the apples and mix them around with a spatula making sure the apples get covered in the butter and sugar mix. Put the lid on the saucepan and simmer on low until the apples start to soften up. Make sure to stir occasionally so all apples get covered in the butter and sugar mix.
While the apples are simmering start on the crumble.
- 120g plain white flour
- 80g butter, cold and cut in squares
- 40g ground almonds
- a handfull of flaked almonds
- 1/2 cup rolled oats
- 2 tbs light brown sugar
Put the flour, ground almonds and butter in a bowl and mix with your fingers until the butter is fully incorporated. Then mix in the oats and sugar. Once the apples have softened up , pour them into your dish and sprinkle the crumble on top. Lastly sprinkle on the flaked almonds.
Put tin foil on top and bake in the oven for approximately 20-25 minutes or until the liquid from the apples starts bubbling and making its way up through the crumble. Take tin foil off and bake for another 5-10 minutes to get a nice golden top. Serve with custard or a scoop of vanilla ice cream.
