If you’re a fan of dips and spreads, you’ve probably heard of ajvar – a delicious roasted sweet pepper spread that’s a staple in Balkan cuisine. While you can buy ajvar in most grocery stores, there’s nothing quite like making your own homemade version, free of preservatives and full of flavor. In this blog post, I’ll share my recipe for ajvar that’s easy to make and tastes just like the homemade spread I enjoyed as a child.

Not only is ajvar delicious, but it’s also packed with nutrients. The red peppers are a great source of vitamins A and C, while the aubergine adds fiber and potassium to the spread. Plus, making your own ajvar is a great way to reduce waste and use up any peppers or aubergines that may be past their prime. To make ajvar, all you need are a few simple ingredients: red long sweet peppers, aubergine, garlic, olive oil, and a dash of white wine vinegar for a bit of a kick.

Put oven on 200°C fan and prep a baking tray.

Tools needed: food processor

Ingredients

3 red long sweet peppers

1 small aubergine

2 garlic cloves

2tbs olive oil

A dash of white wine vinegar

Salt + pepper

First, roast the peppers and aubergine, with some salt and pepper on top, until they’re charred and softened. Once they’re cooled, remove the skin and seeds and chop them into small pieces.

Next, add the chopped peppers and aubergine to a food processor along with garlic, olive oil, and white wine vinegar. Blend everything together until it’s smooth and creamy. Taste and adjust the seasoning if needed.

That’s it! Your homemade ajvar is ready to be enjoyed. Serve it as a dip with pita bread, crackers, or vegetables, or spread it on sandwiches for added flavor.
