This bruschetta is my go to snack for when I feel peckish but don’t want to go to the shop or eat junk. The ingredients in this bruschetta are pretty much what I always have at home so it helps when those cravings set in, and it really does take only 10 minutes. While I used a baguette any bread that you can toast will work. This is also really good for when your bread has started to go a bit stale as all you need to do is pop it under the grill for a few minutes.

Shall we get onto the recipe then.


2 medium sized tomatoes

1 small red onion

1 garlic clove

a bunch of fresh basil

1 tbs balsamic vinegar glaze

a dash of olive oil

salt + pepper

Start by cutting the tomatoes in cubes and put them in a bowl. Next peel and roughly chop the red onion and add to the tomatoes. Peel and thinly slice the garlic clove and add to the tomato and onion mix. Chop a couple of basil leaves and add to the mix. Add a dash of olive oil and the balsamic vinegar glaze. Mix it all together so the juices come together. Salt and pepper to taste.

While the bruschetta mix is sitting there for a bit, prep the bread. If using a baguette slice it diagonally so you get as much bread as possible.

Place the bread slices under the grill in the oven, two minutes on each side. (if you have a toaster this could work as well). Once the bread is nice and crispy spoon on the bruschetta mix, sprinkle some chopped basil on top and enjoy!
