2 medium sized tomatoes

1 small red onion

1 garlic clove

a bunch of fresh basil

1 tbs balsamic vinegar glaze

a dash of olive oil

salt + pepper

To start, cube some fresh tomatoes and put them in a bowl. Peel and roughly chop a red onion and add it to the tomatoes. Thinly slice a garlic clove and add it to the mix, along with some chopped basil leaves. Add a dash of olive oil and a balsamic vinegar glaze to bring it all together. Season with salt and pepper to taste, and mix everything together until the flavors meld.

While the bruschetta mix is marinating, it’s time to prepare the bread. If you’re using a baguette, slice it diagonally so you can get the most surface area for toasting.

Place the bread slices under the grill in the oven, for two minutes on each side until they are nice and crispy. If you have a toaster, you could also use that. Once the bread is toasted, spoon on the bruschetta mix, sprinkle some chopped basil on top, and enjoy!
